Sunsets and Sauvignon Blanc

Is there anything that beats the serenity of a sunset?  To me, there is no soother feeling than watching the sun temporarily disappear into another space.  Top if off with a front row window view sippin’ dry sauvignon blanc (somehow my ONLY wine of choice at the moment) and you can peacefully transport into a state of awe, bliss, and happiness.  Hyatt Carmel Highlands has the most breathtaking views (both in the lounge and at the Pacific's Edge restaurant) where you are given panoramic unobstructed picturesque views of nature’s masterpiece of the sky, ocean, trees and sun.  The lounge and restaurant are perched right above the water so you actually feel like you are floating steadily in the air.  Soaking in the beauty of the surroundings I was even more spoiled with the pampering of my palette from the various dining options.  I chose a beautifully plated chiveche, scallops with mustard seeds and caulliflour, a decadent lemon dessert and fresh coffee (and FYI prior to this fabulous dining experience my evening actually started at the lounge during happy hour where my party was kicked off with a lavender lemon drop!! A total happy hour MUST!)  

As for attire, the restaurant is definitely a half dressy/half casual vibe so you don’t have to worry about totally dressing up.  I kept it simple with with a fitted black dress that has chunky gold buttons running down the whole middle.  Of course, this now so cal girl forgot to pack a jacket to her nor cal native hometown (burr) so I ended up finding a black finged shawl lying around that I kept on the whole night.  Since it was a little bit more chilly I wore these black ankle boots with a clear heel to make my outfit a little more edgy (or should I say, Pacific Edgey – pun indended)
